Oatmeal Flax Waffles

Healthy hearty breakfast to start the year off right! Been playing at home with a few ideas for some of our awesome brunch menus, this is one of my best successes yet.

 

OATMEAL FLAX WAFFLES

DRY:

½ a cup cornmeal or masa

¼ cup almond flour

¼ cup chia seeds

¼ cup rolled oats

pinch of salt

½ tablespoon baking powder

WET:

1 cup almond milk

¼ cup egg white

2 tablespoons vanilla protein powder

1 tablespoon maple syrup

1/2 tablespoon coconut oil

½ tablespoon flax seed oil

MAKE IT:

  1. Heat up your waffle iron
  2. Mix all dry in a bowl
  3. Mix all wet in a bowl
  4. Combine wet into dry
  5. Transfer into a blender, pulse until combined
  6. Pour 3/4 cup into waffle iron, cook until golden brown (3 – 4 min)
  7. Top with honey, fresh berries, and a sprinkle of chia seeds

 

Side note – they freeze and reheat really well!
