Prior to Joining Blau & Associates he most recently worked to create and develop the innovative restaurant program at the $4 Billion+ opening of Resorts World Las Vegas with over 40 individual concepts.

Prior to Joining Blau & Associates he most recently worked to create and develop the innovative restaurant program at the $4 Billion+ opening of Resorts World Las Vegas with over 40 individual concepts. Prior to Resorts World, Bryan helped to develop the current operational standards as well as food & beverage program at STK Las Vegas which helped to grow sales to over $30 million annually throughout his time there. Prior to STK, Bryan worked directly with Thomas Keller for 8 years in the development of Bouchon Las Vegas and Chef Keller’s multiple bakery outlets.
